Ingredients
  

For the Meatballs

  • 1 lb ground chicken providing a tender and juicy base.

  • 1 tbsp Thai red curry paste for that signature Thai flavor.
  • 1 can (14 oz) coconut milk providing creaminess and richness.
  • 1 tbsp soy sauce to balance out the flavors.
  • 1 tsp brown sugar for a touch of sweetness.
  • 1/2 juice lime adding brightness and acidity.

For Serving

  • 1 small bunch fresh cilantro or Thai basil for garnish.

Instructions
 

Preparation

  • In a bowl, combine ground chicken, minced garlic, grated ginger, red chili (if using), chopped cilantro, fish sauce, salt, ground white pepper, and panko breadcrumbs. Mix until well combined, and then form into meatballs, about 1-2 inches in size.
  • In a pan over medium heat, heat vegetable oil. Cook the meatballs until they are browned on all sides and cooked through, about 7-9 minutes. Remove the meatballs and set aside.

Cooking the Sauce

  • In the same pan, add chopped onion and minced garlic. Sauté until the onion is soft and translucent, approximately 3-4 minutes.
  • Stir in the Thai red curry paste and cook for 1 minute.
  • Add coconut milk, soy sauce, brown sugar, and lime juice to the pan. Bring to a gentle simmer.
  • Return cooked meatballs to the pan and let them simmer in the sauce for an additional 5-10 minutes.

Serving

  • Serve the meatballs topped with fresh cilantro or Thai basil, alongside warm garlic naan.

Notes

Consider prepping ingredients in advance to streamline cooking. Adjust the spiciness as needed, and gently stir the coconut milk to prevent curdling.
