  • 1 lb ground beef delivering a rich, meaty flavor
  • 1 oz packet taco seasoning a blend of spices that adds fragrant warmth
  • 2/3 cup water to bring everything together
  • 16 oz can of refried beans creamy and smooth for a fulfilling touch
  • 10 oz can of red enchilada sauce tangy and robust
  • 10 (6-inch) flour tortillas soft and pliable for easy wrapping
  • 1 cup shredded cheddar cheese sharp and melty
  • 1 cup shredded Monterey Jack cheese for a creamy texture
  • to taste sliced black olives for a briny kick
  • to taste chopped fresh cilantro adding a fresh, aromatic touch
  • to taste sour cream to drizzle for creaminess
  • to taste sliced green onions for a burst of color and flavor

Instructions
 

Preparation

  • Preheat your oven to 375°F and lightly spray a 9x13-inch baking dish with cooking spray.
  • In a skillet, cook and crumble the ground beef over medium heat until it’s beautifully browned. Drain any excess grease.
  • Add the taco seasoning and water to the beef, stirring for 2-3 minutes until well combined. Mix in the refried beans until everything is fully heated through and creamy.
  • Pour a generous layer of red enchilada sauce into the bottom of your baking dish.

Assembly

  • Assemble the enchiritos by placing 1/3 cup of the beef mixture and a sprinkle of cheese in each tortilla. Roll them up tightly.
  • Place the rolled tortillas seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the top of your assembled enchiritos, making sure to cover them well. Sprinkle the remaining cheeses over the top.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbling and golden.
  • Let them cool for about 5 minutes before garnishing with olives, cilantro, sour cream, and green onions.
  • Serve hot and enjoy!

Notes

For an extra touch, consider adding diced jalapeños or bell peppers. Swap half the beef for lentils or black beans for a lighter dish. Whole wheat tortillas can add more nutrition and flavor.
