For the Beef Marinade

For the Noodles and Vegetables

  • 8 ounces udon noodles Thick and chewy.
  • 2 tablespoons vegetable oil For stir-frying.
  • 3 cloves garlic, minced Adds a fragrant aroma.
  • 1 red bell pepper, sliced red bell pepper Adds sweetness and color.
  • 1 green bell pepper, sliced green bell pepper Adds freshness.
  • 1 medium onion, sliced Enhances overall flavor.
  • 1/2 cup beef broth Infuses moisture and richness.
  • 2 green onions, chopped green onions For garnish.

Preparation

  • Thinly slice the beef sirloin into strips and combine it in a bowl with soy sauce, oyster sauce, sesame oil, cornstarch, and black pepper. Allow it to marinate for at least 15 minutes.

Cooking

  • Prepare the udon noodles according to the package instructions. After cooking, drain the noodles and set them aside.
  • In a large pan or wok over medium-high heat, add the vegetable oil. Once hot, stir-fry the minced garlic for about 30 seconds until fragrant.
  • Add the marinated beef to the pan. Sear for 1-2 minutes to develop a brown color and seal in juices.
  • Once the beef is nearly cooked, toss in the sliced red and green bell peppers and onion. Stir-fry for an additional 2-3 minutes until tender.
  • Pour in the beef broth, stirring well, and bring the mixture to a simmer.
  • Add the cooked udon noodles, tossing to coat them in the sauce. Stir continuously for 1-2 minutes.
  • Top with chopped green onions and serve hot.

Notes

For even more robust flavor, consider marinating the beef for up to an hour. Substitute with chicken or tofu for variations.
