Preparation

  • Mix in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, stirring until just combined.
  • Toss the blueberries with cornstarch and fold gently into the dough.

Baking

  • Scoop out 1 1/2 tablespoons of dough for each cookie, placing them on prepared baking sheets about 2 inches apart.
  • Bake for 12-14 minutes until edges are golden and centers are soft.
  • Allow cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack.

Glazing
