  • 6 pieces flour tortillas Soft and pliable, perfect for rolling up all the goodness.
  • 0.5 cup queso cheese dip Creamy and rich, elevating the cheese factor.
  • 2 cups Mexican blend cheese, shredded A melty topping that brings everything together.
  • 10 oz red enchilada sauce For drizzling over the enchiladas before baking.

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a skillet over medium-high heat, cook ground beef and diced onions until browned. Drain any excess grease.
  • Stir in taco seasoning, red enchilada sauce, and drained Rotel tomatoes. Cook for 2-3 minutes.
  • For each tortilla, fill with beef mixture, drizzle with queso dip, sprinkle with Mexican cheese, and roll tightly.
  • Place rolled enchiladas seam-side down in a baking dish.
  • Pour the second can of red enchilada sauce over the enchiladas and sprinkle remaining cheese on top.
  • Cover with foil and bake for 25-30 minutes.
  • Let cool slightly before serving.

Notes

Add extra veggies like bell peppers or black beans for nutrition. For heat, add jalapeƱos or chili powder. Assemble a day ahead for convenience.
