  • In a large skillet over medium heat, brown the ground beef and diced onion. Drain any excess grease.
  • Stir in the tomato paste and cook for 2-3 minutes until aromatic.
  • Add the taco seasoning, red enchilada sauce, and drained Rotel. Stir until combined.
  • Introduce the frozen cheese tortellini and cover with a lid, simmering on low for 5-7 minutes.
  • Top with shredded Colby Jack cheese, cover again to melt, and garnish with green onions before serving.

Notes

For best results, drain excess grease from ground beef. Avoid overcrowding the skillet and don't overcook the tortellini. This can be made ahead by preparing the sauce in advance.
