Preparation

  • Toss chicken thighs in cornstarch, soy sauce, kosher salt, and ground black pepper until well coated to create a delicate crust.

Cooking

  • In a large skillet, heat vegetable oil over medium-high heat. Sear the chicken until golden brown, about 4-5 minutes per side, then remove the chicken and set aside.
  • Add the remaining vegetable oil to the pan. Cook the assorted mushrooms and green onions for 2-4 minutes until tender and caramelized.
  • Add minced garlic and grated ginger to the pan, cooking for an additional minute.
  • In a separate bowl, whisk together the remaining soy sauce, light brown sugar, sesame oil, oyster sauce, and rice grape juice vinegar.
  • Return the seared chicken to the pan, pour the sauce over everything, and toss for 2-3 minutes until the sauce thickens.
  • Adjust seasoning with additional kosher salt and coarsely-ground black pepper to taste. Serve over steamed rice.

Notes

For best results, sear the chicken properly and avoid overcrowding the pan. Adjust seasonings throughout the cooking process for perfect flavor. Consider serving with salad or spring rolls.
