Ingredients
  

For the Quesadillas

  • 2 lbs boneless skinless chicken thighs Tender and juicy.
  • 1 green pepper sliced Adds crunchy texture.

  • 2-3 tablespoons taco seasoning Infuses spices into chicken.
  • Oil for cooking For achieving a perfect sear.
  • 6-8 large flour tortillas Soft and pliable.
  • 2-3 cups shredded Mexican cheese Essential for gooeyness.

For the Guacamole

  • 3 ripe avocados Provides creamy texture.
  • 1/2 onion diced Adds flavor and crunch.
  • 1 tablespoon fresh cilantro, chopped Adds freshness.
  • 2 jalapeño peppers diced Optional heat.
  • 1 medium tomato, diced Enhances guacamole.
  • 2 limes juice of Adds tanginess.
  • Salt and pepper to taste Essential for flavor.

Instructions
 

Preparation

  • Heat oil in a large skillet over medium-high heat.
  • Season chicken thighs with taco seasoning. Cook for about 7 to 10 minutes until browned and cooked through. Remove from skillet and set aside.

Cooking Vegetables

  • In the same skillet, add sliced green and red bell peppers along with the sweet onion. Sauté until tender and caramelized, about 5 to 7 minutes.

Combine Ingredients

  • Return cooked chicken to the skillet and mix with sautéed peppers and onion for an additional minute.

Make Guacamole

  • In a separate bowl, mash avocados and mix in diced onion, cilantro, jalapeño, tomato, lime juice, and salt and pepper to taste.

Assemble Quesadillas

  • Lay a tortilla flat and start with a sprinkle of cheese, followed by a scoop of chicken mixture and more cheese on top. Fold the tortilla in half.

Cook Quesadillas

  • Heat a skillet over medium heat. Cook each quesadilla for 2 to 3 minutes on each side until golden brown and the cheese is melted.
  • Allow quesadillas to rest for 1-2 minutes before cutting into wedges.

Serve

  • Serve warm quesadillas with freshly made guacamole on the side.

Notes

Feel free to switch up the veggies, and experiment with different cheeses. You can prepare chicken and veggies ahead of time.
