Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Season the chicken thighs generously with salt, pepper, paprika, garlic powder, onion powder, and Italian seasoning.
  • In a large skillet, add a drizzle of olive oil and cook the chicken over medium heat until fully cooked.
  • Remove from the skillet and shred the chicken into bite-sized pieces.

Cooking the Filling

  • In the same skillet, sauté the finely diced onion, celery, and carrots for about 5-7 minutes until softened.
  • Stir in the minced garlic, fresh rosemary, and thyme; cook for an additional minute until fragrant.
  • Melt the butter in the skillet and sprinkle in the flour, stirring constantly to create a roux.
  • Gradually pour in the chicken stock and heavy cream while whisking continuously until thickened.
  • Mix in the shredded chicken, grated parmesan cheese, Worcestershire sauce, frozen peas, and corn until well combined.

Assembly & Baking

  • Fit one sheet of puff pastry into a pie dish, covering the base and sides.
  • Pour the chicken filling into the pastry-lined dish, then lay the second sheet of puff pastry on top.
  • Seal the edges thoroughly and cut several slits in the top of the pastry for steam to escape.
  • Brush the top with the beaten egg and sprinkle with coarse salt.
  • Bake for 30-35 minutes, or until the pastry is golden brown and flaky.
  • Allow the pot pie to rest for about 10 minutes before serving.

Notes

For extra flavor, consider adding a splash of white wine to the onion mixture. Feel free to experiment with different vegetables or proteins.
