Instructions
 

Preparation

  • In a bowl, mix together the shredded coconut, cream cheese, powdered sugar, and vanilla extract until well combined and thick.
  • Shape the mixture into small balls, approximately the size of a tablespoon, and place them on a lined baking sheet.
  • Freeze the baking sheet for about 30 minutes to help the balls hold their shape.

Chocolate Coating

  • Melt the dark chocolate chips and coconut oil in a microwave-safe bowl, stirring frequently until smooth.
  • Dip each frozen ball into the chocolate mixture, allowing the excess to drip off.
  • Place the coated balls back on the lined baking sheet and refrigerate until the chocolate is set, about 20 minutes.

Notes
