  • 3 to 4 pieces ripe bananas, mashed (about 1 1/4 cups) Choose bananas with plenty of brown spots
  • 3/4 cup granulated sugar Adds sweetness and caramelization
  • 2 large eggs Binds ingredients together
  • 6 tablespoons unsalted butter, melted and cooled Adds richness and moisture
  • 1/3 cup sour cream (or plain Greek yogurt) Contributes to moist texture

Preparation

  • Preheat your oven to 350°F. Grease an 8 1/2 x 4 1/2 inch loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
  • In a large bowl, mash the ripe bananas with a fork until smooth. Whisk in the sugar, eggs, melted butter, sour cream, and vanilla extract until everything is well combined.

Mixing

  • Gently add the flour mixture to the banana mixture. Stir until just combined, taking care not to overmix.

Baking

  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow it to cool in the pan for 15 to 20 minutes before transferring it to a wire rack to cool completely.

Notes

For additional flavor, consider folding in a handful of chopped nuts or chocolate chips into the batter. For a hint of spice, add a teaspoon of cinnamon to the flour mixture.
