A delightful version of Taco Bell's classic, combining crispy tortillas, seasoned beef, and rich cheese with fresh toppings.

Ingredients
  

For the filling

  • 1 lb ground beef You can substitute with turkey or chicken.
  • 1 medium diced yellow onion Optional but adds fragrance.
  • 1 packet taco seasoning Provides taco flavor.
  • 1/4 cup water To help the seasoning mix.

For the layers

  • 12 taco-sized tortillas taco-sized flour tortillas Form the base of the pizza.
  • 3/4 to 1 cup canola, vegetable, or avocado oil For frying the tortillas.
  • 15 oz refried beans Provides a creamy texture.
  • 10 oz red enchilada sauce Adds flavor and moisture.
  • 8 oz shredded cheddar cheese For delicious cheesiness.
  • 8 oz shredded pepper jack cheese Brings extra flavor.
  • 1 to 2 medium chopped tomatoes Fresh topping for serving.
  • 2 to 3 tablespoons sliced green onions Adds freshness on top.

Instructions
 

Preparation

  • In a large skillet over medium heat, add the ground beef and diced onion (if using). Cook until the meat is fully browned, breaking it apart as it cooks, and drain any excess grease.
  • Stir in the taco seasoning and water, allowing the mixture to simmer for about 3-5 minutes.

Cooking the Tortillas

  • In a separate skillet, heat the oil over medium-high heat. Fry each tortilla for approximately 30 seconds on each side until they are golden and crispy. Drain them on paper towels afterward.

Assembling the Pizza

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Spread a layer of refried beans on one tortilla, add seasoned beef, and sprinkle with cheese. Top with another tortilla.
  • Repeat to stack a total of six pizzas on the prepared baking sheet.

Baking

  • Drizzle red enchilada sauce over the top of each stacked pizza, add cheese, and bake for about 6-8 minutes or until the cheese is melted.

Serving

  • Top with diced tomatoes and sliced green onions before serving. Enjoy!

Notes

For extra crispy tortillas, brush them lightly with oil before frying. Mix and match cheese types for variations. Consider adding spices or different vegetables for a personalized touch.
