Preparation

  • Start by filling a large pot with water and adding a pinch of salt, then bring it to a rolling boil.
  • Add the fettuccine pasta to the boiling water. Cook according to the package instructions, typically about 8-10 minutes, stirring occasionally to prevent sticking.
  • In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic, sautéing for about 1 minute until fragrant.
  • Introduce the shrimp into the skillet, cooking for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp and set them aside.

Cooking

  • In the same skillet, toss in the halved cherry tomatoes and cook for an additional 2-3 minutes until they soften slightly.
  • Reduce the heat slightly and pour in the heavy cream. Stir for about 2 minutes, allowing it to slightly thicken.
  • Add the grated Parmesan cheese, chopped sun-dried tomatoes, and fresh basil to the skillet. Stir until the cheese melts into the sauce.
  • Season with salt and pepper to taste.
  • Return the cooked shrimp to the skillet, ensuring they are coated in the creamy sauce.
  • Drain the fettuccine and add it directly to the skillet. Toss everything together until the pasta is coated in the sauce.

Serving

  • Serve hot, garnishing with additional grated Parmesan and fresh basil.

Notes

Consider marinating the shrimp in lemon juice and garlic for added flavor. For some heat, you can add red pepper flakes to the sauce.
