Preparation

  • Pound Chicken Breasts: Start by placing your chicken breasts between two sheets of plastic wrap and pound to an even thickness of about half an inch.
  • Marinate the Chicken: Whisk together buttermilk and Dijon mustard in a bowl. Submerge chicken in the mixture, cover, and marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  • Prepare Dredging Station: Set up three shallow dishes with flour (seasoned with salt and pepper), beaten eggs, and a mixture of panko breadcrumbs with Parmesan, garlic powder, onion powder, smoked paprika, and additional seasonings.
  • Dredge the Chicken: Remove chicken from buttermilk mixture. Dredge in flour, dip in beaten eggs, and coat thoroughly with breadcrumb mixture.
  • Fry the Chicken: Heat about half an inch of oil in a large skillet over medium-high heat. Fry chicken for about 4-5 minutes on each side until golden-brown and fully cooked.
  • Toast the Buns: Toast the sandwich buns while chicken fries until lightly browned.
  • Assemble the Sandwiches: Spread Caesar dressing on the bottom half of the toasted buns, layer with lettuce, tomato, and onion, place the fried chicken on top, sprinkle with croutons, and drizzle more Caesar dressing.

Notes
