Preparation

  • In a large bowl, combine the ricotta cheese, flour, sugar, eggs, vanilla extract, baking powder, and salt. Mix until it forms a smooth batter.

Cooking

  • Heat oil in a deep frying pan over medium heat.
  • To test the oil temperature, drop a small spoonful of the batter into the oil. If it sizzles immediately and rises to the surface, the oil is ready.
  • Drop dollops of the batter into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown on each side, about 2-3 minutes per side.
  • Remove the zeppole from the oil and let them drain on paper towels to remove excess oil.
  • Dust the warm zeppole with powdered sugar just before serving.

Notes

You can add lemon zest for a refreshing twist or substitute half of the ricotta with mascarpone for a rich variation. Variations can include mini chocolate chips or nuts.
