  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the ground beef to the skillet. Use a spatula to break it up as it cooks, stirring until it is nicely browned, about 5-7 minutes.
  • Stir in the diced onion and red bell pepper. Cook for about 5 minutes, until the vegetables are soft and fragrant.
  • Pour in the red enchilada sauce, black beans, corn, chili powder, cumin, salt, and pepper. Mix everything well, allowing the flavors to meld.
  • Lower the heat and let the mixture simmer for 10 minutes, stirring occasionally.
  • Sprinkle the shredded cheddar cheese evenly on top. Cover the skillet and let it cook for an additional 2-3 minutes, until the cheese has melted.

Notes

You can prepare the vegetables and sauce in advance to save time when cooking. For added flavor, consider adding diced jalapeños or lime juice.
