For the cod

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a small bowl, whisk together soy sauce, honey, grated ginger, minced garlic, and rice vinegar.
  • Place the cod fillets on the prepared baking sheet and season with salt and pepper.

Cooking

  • Brush the soy-ginger mixture over each cod fillet generously.
  • Bake for 12-15 minutes or until the cod is cooked through and flakes easily.
  • Chop green onions and toast sesame seeds in a dry skillet until golden brown.
  • Garnish the cod with green onions and sesame seeds before serving.

Notes

Marinate the fish for 30 minutes for deeper flavor penetration. Cod can be substituted with firm white fish like haddock or tilapia, adjusting cooking times as necessary.
