  • 2 cups shredded cheese (cheddar or Mexican blend) Cheese is the final touch, melting to create a gooey texture.
  • 6 large tortillas Soft and pliable, these tortillas hold all the delicious fillings.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Rinse your rice until the water runs clear. Boil 1 and 1/3 cups of water in a pot, then add the rinsed rice. Cover and simmer for about 15 minutes until fluffy and fully cooked.
  • In a skillet over medium heat, cook the ground beef. Add diced onions and jalapeños, stirring frequently until the beef is browned and onion is translucent, about 7-10 minutes. Drain any excess fat.
  • Mix 1/2 cup of the red enchilada sauce into the beef mixture.

Assembly

  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • For each burrito, assemble with refried beans, beef mixture, rice, and a generous sprinkling of shredded cheese. Roll tightly, ensuring the fillings are secure, and place seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the burritos, then sprinkle with extra cheese.

Cooking

  • Bake for about 15 minutes or until the cheese is melted and bubbly.

Notes
