Preparation

  • Preheat your oven to 350°F (175°C). Prepare three 9-inch round cake pans by greasing and flouring them to ensure easy cake removal.
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.
  • In another mixing bowl, combine the vegetable oil and eggs, whisking them together until completely blended.
  • Gradually pour the wet ingredients into the dry ingredients, mixing gently until just combined.
  • Gently fold in the grated carrots, drained crushed pineapple, and chopped walnuts (if using).

Baking

  • Divide the batter evenly among the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, allow the cakes to cool in their pans for about 10 minutes. Carefully transfer them to wire racks to cool completely.

Frosting

  • For the creamy frosting, beat the softened cream cheese and butter in a mixing bowl until smooth and creamy.
  • Gradually add the powdered sugar and vanilla extract, mixing until fully combined and fluffy.

Notes

For added flavor, consider toasting the walnuts before folding them into the batter. If you’d like a spicier flavor, you can add additional spices such as nutmeg or ginger. Ensure that your cream cheese and butter are at room temperature for the frosting. For brighter colors, substitute half of the grated carrots with grated zucchini.
