Instructions
 

Preparation

  • Preheat your oven to 375°F and grease a baking dish with olive oil.
  • In a large mixing bowl, toss the sweet potatoes, butternut squash, and carrots with 1 tablespoon of olive oil, salt, and pepper.
  • Roast the vegetables in the preheated oven for 15-20 minutes until tender but not mushy.

Layering

  • Start building your layers: Place the sweet potatoes at the bottom, add crumbled feta cheese, and walnuts.
  • Repeat the layering process with butternut squash and carrots.

Glazing and Baking

  • In a saucepan, simmer cranberry juice, honey, and balsamic vinegar until it thickens slightly, about 5-7 minutes.
  • Drizzle two-thirds of the glaze over the layered vegetables and cover with foil, then bake for 30 minutes.
  • Uncover, add the remaining glaze, and bake for an additional 10-15 minutes until golden and bubbling.

Finishing

  • Allow the lasagna to rest for 10 minutes before serving.

Notes

For an elevated flavor, use fresh herbs like rosemary or thyme, or add a dash of nutmeg. Enjoy with a side salad or crusty bread.
