For the whipped cream

  • 1 1/2 cups heavy cream This will create the fluffy whipped layers.
  • 1/4 cup powdered sugar Sweetens the cream just enough.
  • 1 teaspoon vanilla extract Adds warmth and depth to the flavor.

For the blueberry mixture

  • 2 cups fresh blueberries Juicy and sweet, they are the star fruit.
  • 1 tablespoon lemon zest Brings a bright, aromatic quality.
  • 1/4 cup fresh lemon juice Adds the necessary tartness.

For the trifle assembly

  • 1 pound pound cake, cut into cubes Soft and buttery, it forms the base.
  • 1/2 cup lemon curd Offers a creamy, tart explosion of flavor.
  • 1/2 cup mascarpone cheese Adds richness and creaminess.

Instructions

Preparation of Layers

  • In a large mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Beat on medium-high speed until soft peaks form. Set the whipped cream aside for later use.
  • In another bowl, combine the fresh blueberries, lemon zest, and lemon juice. Gently stir this mixture and set it aside to let the flavors intensify.
  • Cut the pound cake into uniform bite-sized cubes, ensuring they are large enough to hold their shape but small enough to fit in a spoon.
  • In a separate bowl, whisk together the lemon curd and mascarpone cheese until the mixture is smooth and creamy, free of lumps.

Assembling the Trifle

  • Begin assembling your trifle: Place a layer of pound cake cubes at the bottom of a trifle dish.
  • Spoon some of the mascarpone and lemon curd mixture over the layers of cake.
  • Add a layer of the blueberry mixture, followed by a layer of whipped cream.
  • Repeat this layering process until all ingredients are used, finishing with a generous swirl of whipped cream on top.
  • For a finishing touch, garnish the trifle with whole blueberries and a sprinkle of lemon zest. Cover the dish and refrigerate for at least 4 hours or overnight.
  • Serve chilled, either family-style or in individual bowls.

Notes

Opt for fresh, ripe blueberries for the best flavor. Customize the recipe by swapping out lemon curd for seasonal fruits or other flavored curds. Allow the trifle to sit for a while before serving for improved flavor.
