  • 1 cup shredded cheddar cheese Melts beautifully.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a mixing bowl, toss the diced Yukon gold potatoes with olive oil, chili powder, cumin, salt, and pepper. Spread evenly on a baking sheet.
  • Roast the potatoes for 25-30 minutes, stirring halfway through for even browning.

Cooking Meat

  • While the potatoes roast, heat a large skillet over medium-high heat and add ground beef, cooking until browned (about 5-7 minutes).
  • Drain any excess fat and stir in the taco seasoning and water. Let simmer for 2-3 minutes until thickened.
  • Incorporate the black beans and corn into the skillet to heat through.

Assembly

  • Divide the roasted potatoes into meal prep containers, topping with the beef mixture.
  • Add salsa, a generous sprinkle of shredded cheddar cheese, and finish with green onions and cilantro if using.

Storage

  • Allow bowls to cool completely before sealing. Refrigerate for up to 4 days.

Notes

For a lighter dish, drain excess fat from the beef. You can also use sweet potatoes or a plant-based protein for alternatives.
