Preparation

  • Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  • In a large bowl, combine the ground beef, grated onion, garlic, fresh parsley, cumin, coriander, paprika, cinnamon, salt, black pepper, and 1 tablespoon of olive oil. Mix thoroughly.
  • Divide the mixture into eight portions, shaping each into long kebabs or oval logs.
  • In a separate bowl, toss the sliced bell peppers, onion wedges, and zucchini with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Arrange the seasoned vegetables around the edges of the prepared sheet pan, placing the beef kebabs in the center.

Cooking

  • Roast in the oven for 18 to 22 minutes, turning the kebabs halfway through.
  • For an optional step, broil for an additional 2 to 3 minutes to enhance the color.

Serving

  • Once cooked, remove from the oven and let the kebabs rest for about 5 minutes before garnishing with fresh parsley.
  • Serve with lemon wedges, warm pita, and garlic yogurt sauce for dipping.

Notes

For extra flavor, marinate the beef mixture for a few hours or overnight. Use skewers if you prefer a classic kebab shape; soak them in water first to prevent burning.
