For the Chicken

For the Gnocchi

  • 1 package gnocchi (about 16 oz) The star of the dish.

Preparation

  • In a large mixing bowl, combine the flour, salt, black pepper, paprika, and garlic powder. Toss the chicken cubes in this seasoned flour mixture until evenly coated.

Cooking

  • Heat the olive oil and butter in a large skillet over medium-high heat. Add the coated chicken to the skillet and cook for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet.
  • In the same skillet, add the minced garlic and sauté for about one minute until fragrant.
  • Pour in the chicken broth, heavy cream, and Parmesan cheese. Stir until smooth and creamy.
  • Stir in the sun-dried tomatoes, red pepper flakes, oregano, and thyme. Let it simmer for a few minutes.
  • Add the gnocchi to the skillet, cover, and cook for 2-3 minutes until tender.
  • Return the cooked chicken to the skillet and mix gently until everything is well-coated. Serve hot.

Notes

For an even richer dish, consider adding sautéed spinach or kale. A splash of lemon juice can brighten the flavors. Taste the sauce before serving and adjust seasoning as needed.
