Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  • In a large bowl, combine the ground beef, grated onion, garlic, parsley, cumin, coriander, paprika, cinnamon, salt, pepper, and olive oil. Mix thoroughly until all ingredients are evenly incorporated.
  • Divide the mixture into eight portions, shaping each into a long kebab around skewers or forming oval logs.
  • In a separate bowl, toss the sliced bell peppers, onion wedges, and zucchini with olive oil, salt, and pepper.

Cooking

  • Arrange the seasoned vegetables around the edges of the prepared sheet pan and place the beef kebabs in the center.
  • Roast everything in your preheated oven for 18–22 minutes, turning the kebabs halfway through.
  • Broil for an extra 2–3 minutes at the end for additional color and crunch.
  • Remove the dish from the oven and allow to rest for about 5 minutes before serving.

Notes

For variations, consider using lean ground turkey or chicken, adding more colorful veggies, or opting for a Greek yogurt dressing instead of garlic yogurt sauce. Prepare kebabs and vegetables ahead and store in the fridge until ready to roast.
