Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Place the baby potatoes on one half of a large sheet pan. Drizzle them with 1 tablespoon of olive oil, and season with salt and pepper.
  • Toss the potatoes to coat evenly and spread them in a single layer.
  • Bake the potatoes for about 15 minutes.
  • In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, basil, salt, and black pepper.
  • Coat each chicken breast in the mixture, ensuring they are fully covered. Place the coated chicken on the other half of the sheet pan.
  • Drizzle with 2 tablespoons of olive oil to help them crisp.
  • After 15 minutes of baking the potatoes, add the broccoli florets to the sheet pan and drizzle with the remaining olive oil. Season with salt and pepper.
  • Return the sheet pan to the oven, and bake for an additional 20-25 minutes until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).
  • Let your meal rest for a few minutes before serving.

Notes

Prep ahead for convenience; you can prep the mixture a few hours in advance and refrigerate. Feel free to add other vegetables like carrots or zucchini. For a spicy kick, add red pepper flakes.
