For the Beef

  • 3-4 pounds beef roast (top round, rump roast, or chuck roast) Choose high-quality cuts for best flavor.
  • 2 tablespoons olive oil Helps the herbs adhere and adds flavor.

For the Seasoning

  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

For the Gravy

  • 2 tablespoons pan drippings
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth Adjust salt and pepper to taste.

Preparation

  • Preheat your oven to 325°F (165°C).
  • Pat the beef roast dry with paper towels to remove any moisture.
  • In a bowl, combine the kosher salt, black pepper, garlic powder, onion powder, thyme, and rosemary.
  • Rub the roast generously with olive oil and coat it evenly with the seasoning mixture.
  • Place the seasoned roast on a rack in a roasting pan.

Cooking

  • Roast the beef for 20 to 25 minutes per pound, aiming for an internal temperature of 135°F (57°C) for medium-rare.
  • Once done, remove the roast from the oven and let it rest for 15 minutes.

Gravy Preparation

  • Use the pan drippings left in the roasting pan to prepare the gravy.
  • Whisk in the flour until smooth, then gradually add in the beef broth, stirring constantly.
  • Simmer until the gravy thickens to desired consistency.

Serving

  • Slice the roast against the grain and serve each slice with a drizzle of gravy.

Notes

For best results, use a meat thermometer to check internal temperature. Consider marinating the beef overnight for extra flavor.
