  • 1 tablespoon honey Enhances the natural sweetness of the salmon.

For the toppings

  • 1 whole ripe avocado Sliced into wedges.
  • 1 whole cucumber Chopped into thin sticks.
  • 1 whole carrot Julienned.
  • 0.25 cup edamame Steamed.
  • 0.25 cup sliced green onions For garnish.
  • 1 tablespoon sesame seeds For garnish.

Preparation

  • Rinse the sushi rice under cold water until the water runs clear.
  • Combine the rinsed rice with water in a rice cooker and cook according to manufacturer's instructions, about 15-20 minutes.
  • In a small saucepan, mix rice vinegar, sugar, and salt over low heat until dissolved. Set aside to cool.

Marinating the Salmon

  • Cut the fresh salmon into bite-sized cubes.
  • Whisk together soy sauce, sesame oil, and honey in a bowl, then add the cubed salmon and let it marinate for 15-20 minutes.

Preparing the Vegetables

  • Slice the avocado, chop the cucumber, and julienne the carrot.
  • Steam the edamame according to package instructions.

Assembly

  • Once the rice is cooked, fluff it with a fork and stir in the cooled vinegar mixture.
  • Assemble your poke bowl by layering sushi rice, marinated salmon, avocado, cucumber, carrot, and edamame.
  • Garnish with sliced green onions and sesame seeds before serving.

Notes
