  • 8 oz cream cheese (softened) This creamy base adds a smooth richness.
  • 1/2 cup powdered sugar Balances the tartness of the berries.
  • 1 tsp vanilla extract Enhances the flavor.
  • 1 cup fresh raspberries Juicy and vibrant for flavor.

For the pastry

  • 1 package phyllo pastry Creates a delightful crispy texture.
  • 1 egg (beaten for egg wash) Gives the bites a golden hue.

Optional garnish

  • mint leaves Adds a refreshing touch.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • Lay out phyllo pastry sheets and cut into 3x3 inch squares.
  • Place a small dollop of the cream cheese mixture in the center of each square and top with a fresh raspberry.
  • Fold the corners of each pastry square over the filling, brush with beaten egg to seal.
  • Place the filled pastries on a parchment-lined baking sheet.
  • Bake for 15-20 minutes until golden brown and crispy.
  • Cool for a few minutes and garnish with fresh mint leaves before serving.

Notes

Keep phyllo pastry covered with a damp towel while working. You can prepare the filling a day in advance and store it in the fridge.
