Instructions
 

Preparation

  • Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
  • In a mixing bowl, combine the crushed Oreo cookies and melted butter until it resembles wet sand.
  • Press the mixture into the bottom of the prepared springform pan to create an even crust.
  • In a separate large bowl, beat the cream cheese until smooth.
  • Add granulated sugar, sour cream, vanilla extract, and cocoa powder, mixing until creamy.

Combining

  • Add the eggs one at a time, mixing after each addition until fully incorporated.
  • Mix in red food coloring until evenly colored.
  • Gently fold in diced strawberries using a spatula.
  • Pour the cheesecake batter over the Oreo crust and smooth the top.

Baking

  • Bake for about 1 hour or until the edges are set but the center jiggles slightly.
  • Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour.
  • Cool to room temperature, then refrigerate for at least 4 hours or overnight.
