Ingredients
  

Crust Ingredients

  • 1.5 cups crushed chocolate cookies for a deep chocolaty flavor
  • 0.25 cups butter, melted to bind the crust

Cheesecake Filling

  • 2 packages cream cheese, softened creamy and rich
  • 1 cup sugar for sweetness
  • 2 large eggs to give structure
  • 1 teaspoon vanilla extract aromatic and flavorful
  • 1 cup sour cream for tanginess
  • 1 cup whipped cream to add lightness
  • 1 jar morello cherries, drained juicy and tart
  • to taste chocolate shavings for garnish for that extra touch

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, combine the crushed chocolate cookies and melted butter. Mix until the ingredients are well combined and have a sand-like texture.
  • Press this mixture firmly into the bottom of a 9-inch springform pan to form a solid crust that will hold its shape once baked.

Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese along with sugar until the mixture is smooth and creamy.
  • Add the eggs one at a time, ensuring you mix well after each addition for a light and fluffy texture.
  • Add in the vanilla extract as an aromatic boost that will enhance the overall flavor.
  • Gently stir in the sour cream, mixing until everything is well incorporated.
  • Next, fold in the whipped cream delicately to lighten up the cheesecake mixture.

Baking

  • Carefully pour the cheesecake mixture over the prepared crust in your springform pan. Use a spatula to spread it evenly.
  • Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly.
  • Once done, turn off the oven and leave the cheesecake inside for one hour to cool gradually.

Cooling and Serving

  • After an hour of cooling in the oven, take the cheesecake out and let it cool completely at room temperature.
  • Refrigerate the cheesecake for at least 4 hours, or even better, overnight.
  • Before serving, adorn your cheesecake with drained morello cherries on top and sprinkle with chocolate shavings.

Notes

Ensure that all ingredients are at room temperature for best mixing. Don't skip the step of letting the cheesecake cool in the oven to prevent cracking. Keep an eye on the baking time as every oven is a bit different.
