Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin pan with 12 cupcake liners.
  • In a small bowl, whisk together the cocoa powder, instant coffee, and boiling water to form a smooth chocolate paste. Allow it to cool.

Mixing the Cupcake Batter

  • In a large mixing bowl, combine the eggs, sugar, oil, buttermilk, and vanilla extract. Mix until fully combined.
  • Stir in the cooled chocolate paste until incorporated.
  • Sift in the flour, baking soda, baking powder, and salt. Gently fold until just combined.

Baking the Cupcakes

  • Divide the batter evenly among the muffin liners, filling them three-quarters full.
  • Bake for about 18 minutes, or until a toothpick inserted comes out clean. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Making the Frosting

  • In a mixing bowl, beat together the powdered sugar, cocoa powder, and butter until crumbly.
  • Gradually add in the milk, beating until fluffy and smooth.

Decorating
