For the sausage gravy

  • 1 lb sausage Select a juicy sausage for robust flavor.
  • 2 cups milk For a creamy and luscious gravy.
  • 1/4 cup all-purpose flour To thicken the gravy.
  • 1 teaspoon salt Enhances flavors.
  • 1/2 teaspoon black pepper Adds warmth and spice.
  • 1/2 teaspoon ground sage For distinctive aroma.
  • 1/2 teaspoon crushed red pepper flakes Optional, for a little kick.

For the pie crust

  • 1 package puff pastry Thawed and used for the crust.

Preparation

  • In a large skillet, cook the sausage over medium heat, breaking it into smaller pieces until browned, about 5 to 7 minutes.
  • Sprinkle the flour over the cooked sausage and stir for about 2 minutes.
  • Gradually pour in the milk while stirring constantly to avoid lumps. Bring to a gentle boil and simmer for 5 minutes until thickened.
  • Season with salt, pepper, and sage.
  • Preheat the oven to 375°F (190°C).

Assembly

  • Roll out one sheet of thawed puff pastry and line a 9-inch pie dish.
  • Pour the sausage gravy into the pastry-lined dish, spreading it evenly.
  • Roll out the second sheet of puff pastry and cover the filling. Seal the edges by crimping.
  • Cut slits in the top crust to allow steam to escape.

Baking

  • Bake the pie in the preheated oven for 25-30 minutes until the crust is golden brown and crisp.
  • Allow to cool for a few minutes before slicing.

Notes

Consider adding spices like thyme or paprika, or veggies like sautéed bell peppers or mushrooms. Garnish with fresh herbs before serving.
