Preparation

  • Heat olive oil in a skillet over medium-high heat until shimmering.
  • Season scallops with paprika, salt, and pepper, coating them generously.

Cooking

  • Place scallops in the skillet and sear for 2-3 minutes on each side until golden brown.
  • Remove scallops and set aside, letting them rest briefly.
  • In the same skillet, add heavy cream and Cajun seasoning, stirring until combined and heated through.
  • Return the scallops to the skillet and gently toss to coat in the sauce.
  • Serve garnished with chopped parsley.

Notes

Avoid overcrowding the skillet while cooking bits by doing them in batches if necessary.
