For the Sandwich

  • 4 slices sourdough or thick white bread Perfect for grilling.
  • 3 tablespoons softened unsalted butter For spreading and grilling.
  • 1 tablespoon chopped fresh parsley Or ½ teaspoon dried parsley.
  • 1.5 cups shredded Monterey Jack cheese Creamy and melty.
  • 1 tablespoon mayonnaise Optional for added creaminess.

Instructions
 

Preparation

  • Heat the olive oil or butter in a skillet over medium heat. Add shrimp, minced garlic, paprika, salt, and black pepper. Cook for 2-3 minutes per side until shrimp is pink and opaque.
  • Squeeze in the lemon juice, stir, chop shrimp into bite-sized pieces, and set aside.
  • In a small mixing bowl, combine softened butter, minced garlic, chopped parsley, and a pinch of salt to make garlic butter.
  • Spread the garlic butter generously on one side of each slice of bread.

Assembly and Cooking

  • Place two slices of garlic-buttered bread in a pan. Layer with half of the shredded Monterey Jack cheese, shrimp filling, and remaining cheese. Top with the other slices of bread, buttered sides facing outward.
  • Preheat the skillet over medium-low heat. Grill sandwiches for about 3-4 minutes on each side until golden brown and cheese is melted, pressing down lightly with a spatula.
  • Remove from heat, slice in half, and serve warm.

Notes

For the best flavor, use fresh shrimp. Grilling on low heat melts cheese properly without burning the bread. Consider adding cayenne pepper for extra kick.
