Marinating the Beef

  • In a bowl, combine the sliced flank steak with soy sauce, cornstarch, and sesame oil. Let this mixture marinate for about 15 minutes.

Preparing the Sauce

  • Whisk together the oyster sauce, light soy sauce, dark soy sauce, sugar, freshly cracked black pepper, and water in a small bowl.

Cooking

  • Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat.
  • Add the marinated beef in batches. Sear for about 1-2 minutes until browned, then set aside.
  • Stir-fry the onion and bell peppers for about 2-3 minutes until slightly tender but still crisp.
  • Add minced garlic and stir-fry for 30 seconds.
  • Return the beef to the wok, add the prepared sauce, and stir continuously for 1-2 minutes until the sauce thickens.
  • Garnish with sliced green onions and serve with steamed rice or noodles.

Notes

For best results, do not overcrowd the pan, and be mindful of timing while cooking.
