Preparation

  • Heat oil in a pan over medium-high heat and sear the beef chunks until browned on all sides.
  • Transfer the beef to a slow cooker.
  • In the same pan, sauté the finely chopped onion, minced garlic, and grated ginger until fragrant and softened.
  • Add curry powder, cumin, paprika, turmeric, and chili flakes to the pan; stir for 1 minute.
  • Stir in tomato paste, coconut milk, beef stock, and soy sauce; mix until fully incorporated.

Cooking

  • Pour the fragrant sauce over the beef in the slow cooker, ensuring every piece is coated.
  • Cover and cook on low for 7–8 hours or high for 4–5 hours until the beef is incredibly tender.
  • Season with salt and pepper to taste.

Serving

Notes

For best results, use quality beef and don't rush the browning process. Allow plenty of time for the beef to become tender and always taste and adjust seasonings near the end of cooking.
