  • 800 g beef chuck, cut into juicy chunks
  • 1 tablespoon light oil (canola or vegetable) for searing
  • 1 onion, finely chopped lending sweetness and depth

  • 2 teaspoons curry powder for a hint of spice
  • 1 teaspoon ground cumin offering an earthy flavor
  • 1 teaspoon paprika for color and subtle smokiness
  • 1/2 teaspoon turmeric giving the dish a beautiful golden hue
  • 1/2 teaspoon chili flakes optional, for a kick
  • 400 ml coconut milk lending creaminess and sweetness
  • 1 cup beef stock for a rich base
  • 2 tablespoons tomato paste for acidity and depth
  • 1 tablespoon soy sauce for umami

Instructions
 

Preparation

  • Heat the light oil in a pan over medium-high heat. Once hot, add the beef chunks and sear them until browned on all sides. Transfer the beef to a slow cooker.
  • In the same pan, add the finely chopped onion, minced garlic, and grated ginger. Sauté until fragrant and softened.

Cooking

  • Sprinkle in the curry powder, ground cumin, paprika, turmeric, and chili flakes (if using). Stir for about one minute to release aromas.
  • Stir in the tomato paste, coconut milk, beef stock, and soy sauce. Mix until well combined.
  • Pour the sauce over the beef in the slow cooker, cover, and cook on low for 7-8 hours or on high for 4-5 hours until tender.
  • Once the beef is tender, season with salt and pepper. Garnish with fresh coriander and serve hot over steamed rice and garlic naan.

Notes

For richer flavor, marinate the beef in spices for a couple of hours before cooking. Adjust spice levels to taste, and consider adding vegetables like potatoes or carrots for extra nutrition.
