Ingredients
  

For the beef

  • 3 to 4 lbs chuck roast, cut into 2-3 inch cubes This cut of meat is known for its rich flavor and tender texture when cooked low and slow.
  • 2 tablespoons BBQ rub (salt, pepper, paprika, garlic-based) Aromatic and flavorful rub to enhance the beef's flavor.
  • 10 oz Dr Pepper Adds a unique twist to the BBQ sauce and contributes to the juicy texture.
  • 6 oz BBQ sauce (sweet and smoky) Perfect balance of sweet and savory to complement the smoky flavor.
  • 1/3 cup brown sugar Adds sweetness that helps caramelize the meat.
  • 1 stick (1/2 cup) unsalted butter, sliced Enhances the overall flavor profile.

For the topping

  • 8 oz cream cheese, softened Adds a creamy texture.
  • 1/2 cup sour cream Balances the richness of cream cheese.
  • 2 jalapeños, finely diced (seeds removed for mild) Introduces moderate heat.
  • 1 medium onion, caramelized Provides a depth of flavor.
  • 1 teaspoon garlic paste (or 2 cloves minced) Adds aromatic allure.

For the sliders

  • 12 to 15 pieces slider rolls (Hawaiian or brioche recommended) Provides the perfect cradle for the filling.
  • 12 to 16 slices pepper jack cheese Adds flavor richness.
  • Crispy fried onions For added crunch and flavor.
  • Extra BBQ sauce for brushing (optional) For an extra flavor boost.

Preparation

  • Pat the cubed chuck roast dry with paper towels.
  • Coat the beef evenly with the BBQ rub and let it rest for 30 minutes.

Smoking the Beef

  • Preheat your smoker to 275°F (135°C).
  • Place the seasoned beef in the smoker for 2-3 hours.
  • Transfer the smoked beef into a foil pan and add Dr Pepper, BBQ sauce, brown sugar, and butter.
  • Cover and increase the smoker’s temperature to 325°F (163°C) until the internal temperature reaches 200-205°F (93-96°C), about 1-2 hours.

Assembling the Sliders

  • Let the beef rest for 15 minutes before shredding it in the pan.
  • In a mixing bowl, combine cream cheese, sour cream, jalapeños, caramelized onions, garlic paste, and salt, mixing until smooth.
  • Preheat your oven to 375°F (190°C) and slice the slider rolls in half.
  • Spread the jalapeño mixture on the bottom half, layer with shredded beef, add cheese and crispy fried onions.
  • Bake covered with foil for 15 minutes, then uncovered for an additional 5-8 minutes.

Notes

For the best results, use a chuck roast with good marbling and consider marinating the beef overnight. Adjust jalapeño seeds for heat preference.
