For the Salad

Instructions
 

Preparation

  • Begin by cooking the rice noodles according to the package instructions. Once cooked, drain them and rinse under cold water until they’re cooled completely.
  • In a bowl, whisk together the minced ginger, garlic, soy sauce, agave nectar, rice grape juice vinegar, sesame oil, canola oil, red pepper flakes, along with a pinch of salt and pepper. Set it aside.

Chopping Vegetables

  • While the noodles cool and the dressing is setting, shred the cabbage finely and julienne the cucumber, carrots, and sweet pepper into thin strips.

Mixing Salad

  • In a large mixing bowl, combine the cooled rice noodles with the chopped vegetables, minced cilantro, mint, and roasted peanuts. Toss gently to combine.
  • Pour the spicy ginger dressing over the noodle and vegetable mixture. Toss thoroughly to coat.

Serving

  • Taste the salad and adjust seasoning if required. Serve immediately or chill in the refrigerator for up to three days.
  • For best freshness, store the salad and dressing separately.

Notes

You can add protein like grilled chicken or tofu for a more filling meal. For a milder dressing, reduce the amount of red pepper flakes.
