Ingredients
  

For the hash

  • 1.5 lbs Yukon Gold potatoes, diced into ½-inch cubes These creamy potatoes become tender and golden when cooked.
  • 1.5 lbs steak (New York, ribeye, or sirloin) Juicy tenderness will enhance the hash.
  • 4 large eggs Provides protein and a luxurious runny yolk.
  • 1 medium onion, cut into chunks Adds aromatic sweetness.
  • 0.5 cup red bell pepper, diced Adds brightness and crispness.
  • 0.5 cup green bell pepper, diced Balances flavors with earthiness.
  • 2 cloves garlic, minced Elevates overall taste.
  • 2 teaspoons salt, divided Essential for flavor.
  • 1.5 teaspoons black pepper, divided Complements spices and steak.
  • 0.25 cup vegetable oil, divided For searing steak and crisping potatoes.
  • 1 teaspoon paprika Adds smokiness and color.
  • 0.5 teaspoon red pepper flakes Adds a little heat.

Instructions
 

Preparation

  • Bring a pot of water to a boil. Add the diced Yukon Gold potatoes and cook for about 5 minutes. Drain and set aside.
  • Let the steak sit at room temperature for about 15 minutes. Season it generously with salt and pepper.

Cooking

  • Heat a large skillet over medium-high heat and add 2 tablespoons of vegetable oil. Sear the steak for about 4-5 minutes on each side until browned. Remove and let rest for 10 minutes before cubing.
  • In the same skillet, reduce heat to medium, add oil if needed, and toss in the potatoes, onion, bell peppers, garlic, paprika, red pepper flakes, and remaining salt and pepper. Cook for about 15 minutes until the potatoes are golden and crispy.
  • Fold the cubed steak into the skillet, mixing well.
  • Create small wells in the hash and crack an egg into each. Cover the skillet and cook for an additional 3-4 minutes or until the eggs are cooked to your liking.
  • Adjust seasoning if needed and garnish with parsley or green onions. Serve hot.

Notes

Use high-quality ingredients for the best flavor. Don't overcrowd the skillet for better browning. Consider different vegetables or spices for personalization.
