Instructions
 

Preparation

  • Rinse 2 cups of jasmine rice under cold water until the water runs clear.
  • Cook the rice according to package instructions and set aside.
  • Slice 1 pound of boneless, skinless chicken breasts into bite-sized pieces.

Cooking the Chicken

  • In a mixing bowl, combine 1/2 cup soy sauce, 1/4 cup honey, minced garlic, grated ginger, 1 tablespoon sesame oil, 1/4 cup rice vinegar, 1/4 cup water, and 1 tablespoon cornstarch.
  • Whisk these ingredients until smooth to create a marinade.
  • Heat 1 tablespoon of sesame oil in a large skillet over medium heat and cook the sliced chicken until no longer pink, about 5-7 minutes.
  • Pour the marinade over the cooked chicken, stirring gently to coat.
  • Allow the mixture to simmer until the sauce thickens, about 3-5 minutes.

Assembly

  • Divide the cooked rice into bowls and top with the sticky chicken mixture.
  • Garnish with sesame seeds, sliced green onions, and a sprinkle of chili flakes.
  • Serve hot.

Notes

For added flavor, consider marinating the chicken for at least 30 minutes before cooking. You can also customize with sautéed vegetables, or use rotisserie chicken for convenience. Store in airtight containers for up to 3 days in the fridge.
