Instructions
 

Preparation

  • In a mixing bowl, combine the oat flour, protein powder, cornstarch, and baking powder. Whisk until well mixed, ensuring no lumps remain.
  • Next, add the liquid egg whites, Greek yogurt, water, and red food coloring to the dry ingredients. Mix until just combined, avoiding over-mixing to keep the pancakes light and fluffy.

Cooking

  • Heat a nonstick pan or griddle over medium heat. It should be hot enough that a few drops of water sizzle on contact.
  • Pour 1/4 cup of the batter onto the heated pan for each pancake. Cook for 1-2 minutes until bubbles form and the edges look set.
  • With care, flip the pancakes and cook for another 1-2 minutes until they are golden brown on both sides.

Serving

  • Once cooked, transfer the pancakes to a plate and sprinkle with white chocolate chips while warm, allowing them to melt slightly.
