Ingredients
  

Crust

  • 2 1/2 cups graham cracker crumbs This will form the base, giving a crispy yet buttery texture.
  • 1/2 cup unsalted butter, melted Adds richness and helps bind the crumb mixture.
  • 1/4 cup granulated sugar Sweetens the crust just right, balancing out the tartness of the strawberries.
  • 1/4 teaspoon salt Enhances the flavors in the crust.

Cheesecake Filling

  • 2 cups cream cheese, softened Provides that luscious, creamy layer we all crave.
  • 1 cup powdered sugar Provides a perfectly sweet cheesecake filling without grittiness.
  • 2 teaspoons vanilla extract Infuses warmth and depth into the mixture.
  • 2 large eggs Adds structure and ensures the filling holds together beautifully.

Strawberry Topping

  • 1 1/2 cups fresh strawberries, chopped Bursting with flavor and juiciness, these will be the star of the show.
  • 2 tablespoons cornstarch Thickens the strawberry topping for a satisfying texture.
  • 1 tablespoon lemon juice Brightens the strawberry flavor, enhancing its natural sweetness.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium-sized mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and salt. Stir until well combined.
  • Press the crumb mixture firmly into the bottom of a greased 9x13-inch baking dish.
  • Bake the crust for about 10 minutes until it's lightly golden and fragrant. Allow it to cool.

Making the Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar and vanilla extract, mixing until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • In a small saucepan, combine the chopped strawberries, cornstarch, and lemon juice. Cook over medium heat until thick.

Assembly and Baking

  • Pour the cream cheese mixture over the cooled crust, spreading it evenly.
  • Dollop the strawberry mixture on top and gently swirl it in with a knife.
  • Bake for 30–35 minutes until the edges are set and the center has a slight jiggle.
  • Allow to cool completely at room temperature, then refrigerate for at least 2 hours before slicing.

Notes

For an extra touch, add a dash of almond extract to the cream cheese mixture. Consider freezing the bars for longer storage.
