Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan and line the bottom with parchment paper.
  • Toss the mixed berries gently with 1 tablespoon of flour and set aside.
  • In a medium bowl, whisk together 1 1/2 cups of all-purpose flour, 1 1/2 teaspoons of baking powder, 1/4 teaspoon of baking soda, and 1/4 teaspoon of salt.

Batter Preparation

  • In another large bowl, beat together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Blend in the vanilla extract.
  • Gradually mix in half of the dry ingredients, then add in the sour cream and milk.
  • Mix until just combined, then fold in the remaining dry ingredients until just incorporated.

Baking

  • Gently fold in the floured berries and pour the batter into the prepared cake pan.
  • Sprinkle with turbinado sugar if desired. Bake for 40-45 minutes, or until a toothpick comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.

Serving

  • Dust the cooled cake with powdered sugar and garnish with extra berries or mint leaves.
  • Serve with whipped cream or vanilla ice cream.

Notes

For a fresh twist, consider adding citrus zest or try using a gluten-free baking blend. Store in an airtight container up to 3 days or refrigerate for a week. For freezing, wrap tightly in plastic wrap and then aluminum foil.
