  • 2 lbs fresh green beans Crisp and vibrant.
  • 1.5 lbs small potatoes Creamy and tender.
  • 1 large yellow onion Aromatic and sweet.
  • 14-16 oz smoked sausage The star ingredient for richness.
  • 1 stick unsalted butter Adds a creamy finish.
  • 1 tablespoon Cajun seasoning Adds a spicy kick.
  • 0.5 teaspoon black pepper Optional for more heat.

Instructions
 

Preparation

  • Layer the halved small potatoes in the bottom of your slow cooker.
  • Sprinkle half of the Cajun seasoning over the potatoes and dot with pats of butter.
  • Add the trimmed green beans and diced onion in an even layer on top.
  • Sprinkle the remaining Cajun seasoning and black pepper over the vegetables.
  • Arrange the sliced smoked sausage coins on top.

Cooking

  • Cover the slow cooker and cook on HIGH for 4 hours or LOW for 6 hours, stirring every hour.

Serving

  • After cooking, stir everything well and serve warm.

Notes

Use fresh ingredients for best results. Prepare vegetables ahead of time for convenience. This dish pairs well with crusty bread or cornbread and can be adjusted for spice level.
