Ingredients

For the skewers

  • 1/2 pound beef, diced into 1-inch nuggets Provides a hearty base.
  • 1/2 pound shell-less shrimp Adds a burst of sweetness.
  • 1 large onion, wedged To caramelize beautifully on the grill.
  • 1 each red bell pepper, chunked Provides vibrant color.
  • 1 each yellow bell pepper, chunked Provides vibrant color.

For the marinade

  • 1/4 cup honey Lends a natural sweetness.
  • 1/4 cup chili sauce Brings a tangy kick.
  • 2 tablespoons olive oil Keeps everything moist.
  • 1 tablespoon apple cider vinegar Adds a zingy note.
  • 1 clove garlic, minced Infuses the skewers with richness.
  • salt and pepper To taste to elevate each bite.

Instructions

Preparation

  • In a bowl, whisk together honey, chili sauce, olive oil, apple cider vinegar, and minced garlic. Sprinkle in salt and pepper to taste.
  • Separate the diced beef into one container and the shrimp into another, dividing marinade equally between the two and reserving 1/4 cup for later. Cover and refrigerate for at least 30 to 120 minutes.

Cooking

  • Thread marinated beef nuggets, shrimp, and chopped bell peppers onto skewers, alternating with onion wedges.
  • Preheat grill or skillet over medium-high heat and grill the skewers, basting with reserved marinade, until beef is done and shrimp turn pink, about 6 to 8 minutes.

Serving

  • Serve the skewers hot, optionally garnished with fresh herbs.

Notes

For deeper flavor, marinate closer to 120 minutes. Experiment with other vegetables like zucchini or cherry tomatoes. You can use a cedar plank on the grill for a smokier flavor. If you don't have skewers, use a grill basket for easier clean-up. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze them for up to 3 months.
