Instructions
 

Preparation

  • Heat coconut oil in a large pot over medium heat until fragrant.
  • Add the finely chopped onion, minced garlic, and grated ginger. Sauté for 3-4 minutes until softened and aromatic.
  • Stir in the red curry paste and cook for another minute.
  • Add the chicken pieces and cook until they start to brown, about 5 minutes.
  • Pour in the chicken broth and coconut milk, whisking until fully combined.
  • Add the bruised lemongrass stalk (if using) and bring the mixture to a gentle simmer.

Cooking

  • Stir in the sliced red bell pepper and mushrooms, letting them simmer for about 10 minutes.
  • Finish by stirring in fish sauce, brown sugar, and lime juice. Taste and adjust seasoning as necessary.
  • Remove the lemongrass stalk before serving.
  • Ladle the soup into bowls and garnish with fresh cilantro and Thai basil leaves.

Notes

Use fresh ingredients for best flavor. Serve with jasmine rice or rice noodles. Adjust spices according to personal preference.
