Cake Ingredients

  • 15 oz white cake mix About 1 box for a tender, fluffy base.
  • 1 cup water Essential for even mixing and hydration.
  • 1/2 cup vegetable oil Provides moisture and richness.
  • 3 large egg whites Should be room temperature for better incorporation.
  • Blue, purple, and pink gel food coloring Used to achieve the rainbow effect.

Pudding and Topping Ingredients

  • 6.8 oz French vanilla instant pudding mix Two small boxes for creamy richness.
  • 3 3/4 cups cold whole milk Helps set the pudding.
  • 8 oz whipped topping, thawed For a light, fluffy finish.
  • 2.82 oz unicorn sparkle candy sprinkles About 1/2 cup for whimsical presentation.

Instructions

Preparation

  • Preheat your oven to 350°F. Spray a 9×13 inch baking dish with non-stick spray.
  • In a large mixing bowl, combine the cake mix, water, vegetable oil, and egg whites. Mix until smooth and free of lumps.
  • Divide the batter into three bowls. Add blue food coloring to the first, purple to the second, and pink to the third. Stir until vibrant.
  • Drop spoonfuls of each colored batter into the prepared dish and use a toothpick to swirl the colors together.

Baking

  • Bake in the preheated oven for 25-28 minutes. Check for doneness with a toothpick; it should come out clean.
  • Allow the cake to cool completely in the pan.

Assembling

  • Poke holes evenly across the surface of the cake using a wooden spoon handle.
  • In a separate bowl, whisk the cold milk and pudding mix for 2-3 minutes until thickened.
  • Pour the pudding mixture over the holes in the cake, ensuring it seeps in. Spread any remaining pudding on top.
  • Gently spread the thawed whipped topping over the pudding layer. Chill in the refrigerator for at least 1 hour.
  • Sprinkle the unicorn sprinkles on top just before serving, then cut into slices and serve chilled.

Notes

Ensure that the cake is completely cool before adding pudding to prevent melting. Use gel food coloring for more vibrant shades.
