  • In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  • Beat in the eggs one at a time, then add the vanilla extract, mixing until combined.
  • Blend the whole milk and sour cream together until smooth and creamy in a separate bowl.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk mixture, mixing just until combined.
  • Carefully fold in the melted white chocolate into the batter.

Baking

  • Divide the batter evenly between the prepared pans and bake in the preheated oven for 25-30 minutes.
  • Remove the cakes from the oven and cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.

Filling and Frosting

  • Gently mash the fresh raspberries in a bowl and stir in the raspberry jam for the filling.
  • In a mixer, beat the heavy whipping cream, powdered sugar, and vanilla until stiff peaks form.
  • Layer one cake with a generous amount of the raspberry filling, followed by a layer of whipped cream, and place the second cake on top and repeat.
